To prepare the veal and speck rolls, first cut the provola cheese into slices 1 and then into small pieces. Pour the breadcrumbs into a bowl and season with oil 2, salt and pepper 3.

Cut the onion into fairly thick slices 13. Assemble the skewers by threading in the wooden skewers in the order: onion, bay leaf 14, roll 15.

Continue with more onion, bay leaf, roll. Finish with another bay leaf and a slice of onion 16. Arrange the skewers on a baking sheet covered with parchment paper and drizzle with a drizzle of oil 17. Bake in the oven at 180°C for 25 minutes. Then raise the temperature to 200°C and continue cooking for another 5 minutes in grill mode. Remove from the oven and let cool: your veal rolls with speck are ready to be enjoyed. Serve them with a fresh salad of lamb's lettuce and cherry tomatoes 18!
