To prepare the saffron cheesecake, first melt the butter and let it cool. Put the biscuits in a mixer 1 and blend to reduce them to powder 2. Transfer everything to a large bowl and add the melted butter 3.

Dissolve the saffron in a tablespoon of warm water 10 and pour it into the mixture 11. Also add the vanilla seeds 12.

Mix everything 13 until you get a smooth cream. Add the sifted cornstarch 14 and, continuing to stir, also the cream 15.

Take the mold and gently pour the cream on the biscuit base 16, then level with a spatula 17 18. Bake in a static oven at 160° for 80 minutes, checking that the surface does not darken too much.

After the cooking time, let the cheesecake cool in the switched off oven, with the door open, for 30 minutes. Once cooled 19, remove it from the mold and remove the parchment paper 20. Your saffron cheesecake is ready to be served 21!
