To prepare the mini Pavesini Charlotte with nougat semifreddo, first take care of the custard: heat the milk in a saucepan 1, while in a bowl beat the egg yolks with the sugar 2. Add the cornstarch 3 and mix to obtain a homogeneous mixture.

When the syrup is almost at temperature, start whipping the egg whites in a separate bowl.

Once it reaches 121°, pour the syrup in a thin stream into the bowl with the egg whites 10 and continue to whip until the mixture has cooled 11. In another bowl, semi-whip the cold cream 12.

Take the custard and work it with a whisk to make it smooth 13, then add a little meringue 14 and incorporate it by mixing vigorously. Also add a little semi-whipped cream 15 and incorporate again. Continue to incorporate meringue and cream alternately, this time mixing gently so as not to disassemble the mixture.

Add the chopped nougat 16, mix one last time and transfer the cream into a pastry bag 17. Fill 5 molds 6 cm high, with a diameter of 7 cm 18.

After this time, unmold the semifreddi: just dip them in hot water and, when the outermost part begins to melt, turn them over on the plate 20.
