    Put the already cleaned octopus in a pot and cook it dry, with a lid, for 40 minutes 1. Meanwhile, cut the cherry tomatoes in half 2 and arrange them on a baking sheet covered with parchment paper 3.

    Add a drizzle of oil and sugar. Season with salt and pepper 4. Add the marjoram, basil 5 and a crushed clove of garlic. Bake in the oven at 160°C for 90 minutes 6.

    Cut the zucchini into rounds and put them in a pan with a drizzle of oil 7, season with salt and pepper 8 and cook until they become golden 9.

    Transfer them to a blender, add a little water 10, a drizzle of oil and blend 11 until you get a smooth and homogeneous cream 12, set aside.

    Once the octopus is cooked, remove it from the pot 13 and let it cool completely. Meanwhile, keep the cooking liquid on the heat 14 and reduce it by more than half 15.

    Transfer it to a blender, add the oil 16 and blend 17 until you get a not too thick sauce 18. To adjust the dosages, keep in mind that the dose of oil must correspond to double the dose of the reduced liquid.

    Once cold, cut the octopus into pieces, pass them in the rice flour 19 and fry them in peanut oil, at 180°C, for a few minutes, they must become crispy 20. Drain them on absorbent paper to eliminate excess oil 21.

    Now plate: on the bottom of the plate put the zucchini cream 22, continue with the fried octopus 23 and the cherry tomatoes 24.
