    To prepare the chocolate and amarena cherry cake with Bimby®, start with the cocoa sponge cake: insert the butterfly into the Bimby® bowl 1, then pour in the eggs 2 and the sugar 3. Close with the lid and whisk at speed 4 for 15 minutes.

    Meanwhile, sift the starch, flour 4 and unsweetened cocoa 5 into a separate bowl. When the mixture is whipped, add the powders 6.

    Turn on Bimby® at speed 3 for 8 seconds to mix everything 7. Line 2 springform pans with a diameter of 18 cm with parchment paper and pour the batter inside 8. Bake in a preheated static oven at 160°C for about 45 minutes 9.

    Meanwhile, take care of the ganache: pour 400 g of cream 10 into the Bimby® bowl and start in Heating Mode at 90°. Once the temperature is reached, add the amarena cherry syrup 11 and the dark chocolate 12.

    Close and turn on at speed 4 for one minute 13. The ganache is ready 14: transfer it to a low and wide baking dish, level the surface 15 and cover with plastic wrap, then put it in the refrigerator to cool.

    After the baking time of the sponge cake, check with a toothpick and remove from the oven 16. Immediately remove the cakes from the mold and let them cool on a wire rack 17. Once cold, cut them in half horizontally 18.

    In this way you will get 4 layers in total 19. Take the ganache from the refrigerator and transfer it to the Bimby® bowl 20. Blend at speed 4 for 30 seconds to soften it, then add the remaining 200 g of cream and continue to whisk at speed 5 for 2 minutes 21.

    At this point the ganache will be smooth and soft 22, then transfer it to a pastry bag with a 10 mm star nozzle. You are ready to assemble the cake: place the first sponge cake disc on the serving plate and brush it with milk, then cover the entire surface with the ganache 23 and add a few pieces of amarena cherry 24.
