    To prepare the chicken cutlets, first cut the chicken breast into very thin slices (3 to 5 mm thick). Break an egg and pour it into a plate, add the salt 1 and whisk vigorously with a fork 2. Put the breadcrumbs and flour in two different plates. Pass both sides of the slices in the egg 3, letting the excess drip away.

    Then pass in the flour 4, again in the egg 5 and then in the breadcrumbs, pressing gently to make it adhere well 6. Make sure that in these steps the chicken breast slices are totally covered by the ingredients.

    Heat the peanut oil to a temperature of about 160°C. Dip the slices one at a time 7 and cook for two minutes per side, until the surface becomes golden 9. Here are the chicken cutlets ready, serve them with lemon wedges and a few lettuce leaves.
