    To prepare the Calabrian turdilli, first pour the water, vermouth 1, oil 2 and sugar 3 into a saucepan. Heat until all the sugar has dissolved. Then let it cool.

    Meanwhile, put the flour in a bowl, add the ground cloves 4, the cinnamon powder 5 and the grated orange zest 6. Mix and create a hole in the center of the flour, like a fountain.

    Pour the liquids slowly into the flour, while kneading with a fork 7 8. Transfer everything to a pastry board and continue kneading with your hands 9.

    You will have to obtain a smooth and homogeneous dough 10. Divide it in half and form bigoli 11 with a diameter of 2cm. Then cut them into pieces of 5 cm in length 12.

    Pass each piece on a gnocchi board 13, or on the tines of a fork, applying little pressure, in order to obtain the characteristic streaks of the dessert. If necessary, use a little flour. Arrange the turdilli on a tray sprinkled with flour 14. Bring the sunflower seed oil to a temperature of 180°C. If you don't have a kitchen thermometer you can dip a wooden toothpick in the oil, if bubbles form around it, the oil has reached the right temperature. Fry a few turdilli at a time, so as not to lower the temperature of the oil too much, until they are golden 15.

    Drain them and place them on absorbent paper 16 in order to eliminate the excess oil. Once you have finished frying, immediately transfer the still hot turdilli into a bowl, pour in the fig honey 17 and mix well 18, so that each sweet is completely covered.

    Then move them to a serving dish 19 and decorate with colored sugar sprinkles 20. Your Calabrian turdilli are ready to be enjoyed 21!
