    To prepare the boiled carrots, first put a pot full of salted water on the heat. Wash the carrots, peel them 1 and trim them. Then cut them into transverse slices about half a cm thick 2 and gradually collect them in a bowl 3.

    As soon as the water reaches boiling point, dip the carrots 4 and cook them for 4-5 minutes if you prefer crunchier carrots, otherwise if you prefer them soft, cook them for 7-8 minutes at most. Meanwhile, fill the bowl with ice water. As the carrots reach the consistency you like best, drain them and transfer them to the bowl 6. In this way you will stop the cooking and obtain a brilliant color.

    Drain them again 7, transfer them to a tray lined with absorbent paper 8 and dry them well with more paper 9.

    Transfer them back to a dry bowl 10 and in the meantime prepare the sauce. In a tall, narrow container, pour the soy sauce 11 and lemon juice 12.

    Add the tahini 13, ginger powder 14 and sesame oil 15.

    Finally, also add the water 16 and blend everything with an immersion blender 17 until you get a smooth, creamy sauce 18.

    Plate the carrots by placing them on top of the sauce 19; add the sesame seeds 20 and the green part of the spring onion cut into slices 21.
