Blackberry Panna Cotta with Pavesini

To prepare the blackberry panna cotta with Pavesini, first put the gelatin sheets in cold water to soak for about ten minutes 1 . In the meantime, pour the cream into a saucepan, add half of the seeds of a vanilla pod 2 and the sugar 3 , stir and turn on the heat.

As soon as it comes to a boil, turn off the heat and add the well-squeezed gelatin sheets 4 , then stir to dissolve it evenly. Transfer the mixture to a jug and fill 2 molds measuring 10x5 cm, which you have previously moistened with water 5 . Place the molds in the refrigerator for at least 3-4 hours, or better overnight 6 .

In the meantime, take care of the syrup: pour the water 7 , the sugar 8 and the other half of the vanilla bean seeds 9 into a saucepan. Stir and bring to a boil.

As soon as it starts to boil, turn off the heat, add the orange liqueur 10 and stir 11 . Put the blackberries in another saucepan 12 .

Add the syrup 13 and cook over medium-low heat for about 10 minutes. When the blackberries have softened 14 , pour them into a colander, taking care to keep some aside for decoration, then crush them with the back of a spoon to obtain a thick and full-bodied juice 15 .

At this point, quickly dip the Pavesini in the blackberry juice 16 and place them on a sheet of parchment paper: you will have to form 2 rows of 5 Pavesini, one under the other, to obtain a sort of square 17 . Make another square in the same way, then proceed with a second layer of Pavesini 18 .

Cut out discs from each square using a pastry cutter with a diameter of 11 cm 19 . With the help of a spatula, transfer the Pavesini disc to the serving plate 20 . After the setting time has elapsed, unmold the panna cotta by gently turning it over on the Pavesini disc 21 . Help yourself by detaching the edges of the panna cotta from the mold with the back of a teaspoon.
