Instructions
  1. 1

To prepare the beef stew, first, remove the outer membrane of the meat 1, then cut it into slices 2 and then into pieces of 4-5 cm 3.

  2. 2

Pour the oil into a large saucepan, heat it and then add the meat 4. Brown until golden on all sides 5, then remove the meat and set aside 6.

  3. 3

Cut the celery 7 and carrots 8 into cubes and slice the onion 9.

  4. 4

Transfer everything to the same saucepan in which you browned the meat 10 and sauté for 5-7 minutes over low heat, until the vegetables are tender. Add the rosemary 11 and the crushed garlic in its skin 12.

  5. 5

Also add the tomato paste 13 and cook for another 2 minutes. Transfer the meat back into the saucepan 14 and deglaze with red wine 15.

  6. 6

Once all the alcoholic part of the wine has evaporated, wet with the meat broth 16 and season with salt and pepper 17. Close with a lid 18 and cook for 2 and a half hours (or even 3 if necessary): the meat must be very tender. If the cooking sauce is too liquid you can remove the meat from the saucepan and continue cooking to reduce its volume.

  7. 7

Meanwhile, dedicate yourself to the preparation of the mashed potatoes. In a pot, boil the potatoes in plenty of salted water for about 30 minutes, until they are soft. Drain them and let them cool for a few minutes, then mash them with a potato masher directly into a pot 19. Add the butter 20 and the milk 21, previously heated.

  8. 8

Add the grated black truffle 22 and mix until you get a homogeneous mixture 23. Plate by placing the mashed potatoes on the bottom of the plate 24.

  9. 9

Pour the meat on top 25, drizzle it with a tablespoon of its cooking sauce and complete with fresh chopped parsley 26. If you want, you can also add black truffle flakes. Your beef stew is ready to be enjoyed 27.
