Instructions
  1. 1

To prepare the baked shi drum, first of all, dedicate yourself to cleaning the shi drum. Make a cut on the belly, reaching under the head, remove the entrails and rinse under running water to remove all impurities. Scale with the appropriate tool, or with the back of a knife under running water. Cut off the ventral and dorsal fins 1. Make an oblique cut 2, just after the gills, starting from the back and rejoining the cut made on the belly. Cut the tail and the dorsal part of the fish following the spine 3. In this way you will have obtained the first fillet, repeat the same procedure for the second fillet.

  2. 2

Remove any bones with tweezers 4. Cut the fillets into lozenges of about 180 g each 5 and make 2-3 cuts on the skin 6.

  3. 3

Add salt on both sides of the fillets 7 and set aside until ready to use. Peel the potatoes 8 and cut them into cubes 9.

  4. 4

Cut the onions into wedges 10. Collect potatoes and onions in a bowl 11 and season with rosemary 12.

  5. 5

Add oil 13, salt and pepper 14. Mix so that the seasoning coats all the vegetables well. Then put them on a baking sheet covered with parchment paper and bake in a static oven, preheated, at 200°C for 35 minutes. Remove the baking sheet from the oven and place the shi drum fillets on the vegetables 15. Put back in the oven and cook for another 10 minutes in the same way. The fish should be golden, cooked but not dry.

  6. 6

Put the vegetables on the bottom of the serving dish, place the shi drum fillets on the surface 16. Complete with fresh marjoram 17. Your baked shi drum is ready to be served 18.
