    To prepare the sgabei, first put the yeast in a bowl 1, add the lukewarm water and dissolve it 2. In a bowl put the flour and pour all the water 3.

    Add the oil 4 and start kneading with a spoon. Add the salt 5, then move to a pastry board and knead until you get a smooth and homogeneous dough 6.

    Transfer it to a floured bowl 7 and let it rise, covered with plastic wrap, in a dry place without drafts for 3 hours or until doubled in size 8. Take the dough again and roll it out with a rolling pin to create a sheet of 1 cm thick 9.

    With a pastry cutter, redefine the edges 10, then divide the rectangle into strips 15 cm long and 2-3 cm wide 11. You will get about 16 pieces. Cover with a clean cloth and let rise for 1 hour in a dry place without drafts. Heat the peanut oil to a temperature of 170-175°C and fry 2-3 sgabei at a time 12, so as not to lower the temperature of the oil too much.

    Cook for 2 minutes per side 13. Once they are golden brown 14, arrange them on absorbent paper to remove excess oil. Season with a little salt and your sgabei are ready to be served 15.
