Instructions
  1. 1

To prepare the potato spirals, first boil the potatoes starting from cold water, for about 30-40 minutes until they are soft 1. In the meantime, take care of the mayonnaise with cruschi peppers: pour the milk and cold sunflower oil into a jug 2, then salt 3.

  2. 2

Immerse the immersion blender 4 and blend at medium speed until the mixture has thickened. At this point add the lemon juice 5 and blend again for a few seconds 6.

  3. 3

Add the crumbled cruschi peppers 7, blend again to mix 8 and set aside the mayonnaise obtained 9.

  4. 4

Drain the cooked potatoes, press them while still hot with the potato masher 10 and collect the puree in a bowl 11. Season with the fresh marjoram leaves 12.

  5. 5

Add the whole egg 13 and the yolk, then pour in the flour 14 and salt 15.

  6. 6

Mix the mixture until it has blended 16, then transfer it to a pastry bag with a 12 or 13 mm nozzle 17. Cut out squares of 10x10 cm from the baking paper sheets and squeeze the dough starting from the center 18.

  7. 7

You will have to form spirals 19. Heat the sunflower oil in a saucepan and, once it has reached 180°, dip the baking paper sheets with the spirals 20, then with tongs remove the paper 21. Fry a few pieces at a time to prevent the oil temperature from dropping.

  8. 8

Once the spirals are evenly golden, drain 22 on a tray lined with baking paper and season to taste with Maldon salt 23. The potato spirals are ready to be enjoyed with the cruschi pepper mayonnaise 24!
