Scale it under running water, then make a cut on the belly and gut it, pass it again under running water to remove any impurities. Make an oblique cut, just after the gills 1 , starting from the back and rejoining the cut previously made on the belly. Cut the tail and the dorsal part of the fish following the spine 2 , thus obtaining the first fillet, repeat the same procedure for the second 3 .

    Squeeze the lemon 7 and the lime 8 and pour the juice over the sea bass cubes 9 .
