    To prepare the francesina, start with the boiled meat: clean the onion and cut it in half, then insert 4 cloves into the pulp 1. Pour 4 liters of water into a pot, add the celery stalks and the peeled carrot 2. Tie together bay leaf, thyme and parsley with kitchen twine and insert the aromatic bunch into the pot 3.

Cook for about 3 hours (even 3 and a half hours, if necessary), taking care to simmer the broth for the whole time otherwise the meat will be ruined.
