    To prepare the broccoli fritters, first clean the broccoli: remove the leaves from the green broccoli and get only the florets 1, then do the same with the Romanesco broccoli 2. Dip all the florets in a pot of boiling water 3.

    Add salt 4 and cook until soft. Meanwhile, cut the scamorza cheese into cubes 5. Drain the broccoli and transfer them to a mixer 6, then blend until you get a homogeneous mixture.

    Pour the mixture into a bowl and add the egg 7, grated Parmesan cheese 8 and breadcrumbs 9.

    Season with salt and pepper 10, then mix everything together 11. Take a little dough, flatten it and put a cube of scamorza cheese in the center 15.

    Close the dough over the filling and form a fritter 16. Repeat the same procedure until the ingredients are used up. Roll the fritters in the breadcrumbs 17 so as to cover them completely 18.

    Place the fritters in a baking sheet lined with parchment paper, drizzle with oil 19 and bake in a preheated static oven at 180°C for 25 minutes, turning them halfway through cooking. Plate 20 and complete with a few basil leaves. Your broccoli fritters are ready to be served 21!
