To prepare the beef burger with eggplant, burrata and cherry tomatoes with Bimby®, start with the pre-dough: pour 5 g of sugar 1, 50 g of flour 2 and 50 g of water 3 into the bowl.
- 2
Also add the yeast 4, close the bowl with the lid 5 and heat at 37° at speed 2 for 1 minute. Let the mixture rest for 30 minutes. Then add the milk 6.
- 3
Continue by adding the remaining 300 g of flour 7, the egg 8 and the remaining 10 g of sugar 9.
- 4
Finally add the salt 10, the butter 11 and the remaining 65 g of water 12. Cover the bowl with the lid and start the Spiga mode to knead for 4 minutes.
- 5
Transfer the dough to the work surface and form a dough, then put it in the Varoma covered with parchment paper 13 and close with the lid 14. In the meantime, pour the water into the bowl 15.
- 6
Add the lemon juice 16, close with the lid 17 and place the Varoma on it 18. Set the Fermentation mode to 40° for 2 hours.
- 7
Recover the leavened dough and transfer it to a lightly floured work surface, then divide it into 6 equal parts 19 and form balls 20. Place the balls on a baking sheet covered with parchment paper 21, cover with a clean cloth and let rise for 30 minutes.
- 8
Brush the sandwiches with the beaten egg 22 and sprinkle with pumpkin seeds 23. Bake in a preheated static oven at 180° for 15-20 minutes, until the surface becomes golden 24. Remove the sandwiches from the oven and let them cool completely.
- 9
Now move on to preparing the vegetables: in a baking sheet lined with parchment paper, arrange the eggplant cut into slices and the cherry tomatoes cut in half, then season with oil 25 and salt 26. Bake in a fan-assisted oven at 200° for 30 minutes 27.
- 10
In the meantime, dedicate yourself to preparing the burger: cut the beef into 2-3 centimeter cubes 28 and put it in the bowl 29. Close with the lid and chop at speed 7 for 15 seconds. If the meat has not chopped evenly, repeat the operation for 5 seconds. Season with salt and pepper 30.
- 11
Finally add the garlic powder 31, close the lid and mix at speed 3 for 5 seconds. Transfer the meat to the work surface, divide it into 6 portions 32. First form meatballs, then crush them to obtain the burgers 33.
- 12
In a pan, heat a drizzle of oil 34, then place the burgers 35 and brown for 3-4 minutes per side, depending on the desired cooking level 36.
- 13
You are ready to assemble the burgers: divide the sandwiches in half, then place the eggplants on the base 37. Continue with the beef 38 and the burrata 39.
- 14
Add the cherry tomatoes and basil 40. Finally, season with a drizzle of oil and pepper. Close the sandwich 41 and your beef burger with eggplant, burrata and cherry tomatoes with Bimby® is ready to be enjoyed 42!
