Heat a finger of oil in a fairly large pan. When it is hot (you can check the temperature by dropping a pinch of breadcrumbs into the oil and seeing if it sizzles) fry a few artichokes at a time 10 on both sides until golden brown; it will take about 2 minutes per side.
