    Per preparare il brodo di cappone come prima cosa sciacquate la carne sotto acqua corrente fredda 1 per rimuovere eventuali impurità. Poi mettetela in una grande pentola, insieme all’acqua 2 e portate a bollore a fiamma alta. Intanto occupatevi delle verdure. Tagliate il sedano a tocchetti 3 .

    Fate la stessa cosa per le carote 4 . Tagliate le cipolle a metà 5 ed eliminate la buccia 6 .

    Quando il cappone cuoce rilascia della schiuma, rimuovetela delicatamente con un mestolo 7 . Aggiungete la salvia, il rosmarino 8 e l’alloro 9 .

    Unite anche le bacche di ginepro 10 , i chiodi di garofano 11 e le cipolle 12 .

    Continuate con sedano e carote 13 . Aggiungete una manciata di sale grosso 14 e riportate a bollore. Raggiunto il bollore abbassate la fiamma al minimo. Durante i primi 20-30 minuti di cottura si verrà a formare altra schiuma sulla superficie, eliminatela con il mestolo 15 . Coprite parzialmente la pentola con un coperchio e fate cuocere per almeno 4 ore. Più a lungo cuoce, più il brodo sarà saporito. Eliminate la schiuma che si formerà man mano e pulite i bordi della pentola con un pennello. Se dovesse ridursi troppo potete aggiungere altra acqua.

    Una volta cotto potete servire subito il cappone insieme al brodo 16 ; in alternativa potete filtrare il brodo attraverso un colino 17 o una garza e utilizzare solo il brodo per le vostre preparazioni 18 e gustare il cappone lesso come secondo piatto.
